Easy Mexican Breakfast Burritos Recipe
I have been on my journey to getting healthy for about a month, and out of all the things that I have learned, it’s that nutrition is the most important thing. Working out is great, but it means nothing if you are not getting the proper nutrition. I read a quote the other day that said “Everytime you put a food in your mouth you are either fighting disease, or fueling it”. And that really resonated with me. I used to think that as long as I stayed under my calorie goal for the day then it didn’t matter if I ate fast food all day. I’m learning now that that isn’t true.
I’ll admit, I’m not the best cook, I’m learning, but it’s not easy, but when it comes to throw them together meals, I’m awesome. And I’m learning that easy doesn’t equal unhealthy! I wanted to share this Mexican Breakfast Burritos Recipe with you because it’s got great healthy fats, protein, and veggies which is perfect morning fuel for you. It’s also easy to make AND you can make a batch of them and then freeze them! That way when it’s a weekday morning and you are running short on time, you can pop one of these in the microwave for 2 minutes and skip the drive thru line at a fast food joint. Win Win!
Here is how to make my Mexican Breakfast Burritos:
You Will Need:
- Whole Wheat Tortillas
- Shredded Mexican Cheese
- Turkey Sausage Links
- Chopped Onion
- Chopped Avocados
- Salsa
- Scrambled Eggs
- Optional: Chopped Jalapenos
The best thing about breakfast burritos is how easy they are to make. All you need to do is cook your sausage and eggs, chop your veggies and pile all that yumminess on to your whole wheat tortilla and wrap it up! The amount of ingredients you need is dependent on how many you make and how full you stuff them!
One you wrap them up you can gobble one up right then, OR you can wrap them up and put them in the freezer for up to 2 months after you make them. How’s that for a quick and easy breakfast? #Winning

These look tasty and I am glad you made them healthy for those of us who are trying to be aware of our intake
