It’s strawberry season down here in Tennessee ya’ll! Nothing says summer like a ripe red strawberry on a hot day if you ask me! I’m lucky to live in an area surrounded by farm land. We have plenty of fresh fruit, farmers markets, and something my family and I love to do every summer, a strawberry patch! It is so fun to head to the strawberry patch and pick out some fresh strawberries first thing in the morning. Lucky for us our patch also happens to be on a pig farm, so we can pick up some fresh bacon and sausage as well. Which means after our visit we go home and make a yummy and super fresh breakfast! But there is one tiny downside. When you have a daughter that loves picking the strawberries, you end up with 4 pounds of strawberries. So you have to get a little creative in how you are going to eat all those strawberries before they go bad. But don’t you fret! There are So many ways to eat strawberries. Easy Strawberry Mousse Recipe

Sometimes it is the simple things in life that are so good. Our simple and easy strawberry mousse recipe is perfect for soothing a sweet tooth or surprising your sweet heart. With only 3 ingredients you can whip it up in no time. It can also be dressed up in a fancy glass or used in many other recipes.

Easy Strawberry Mousse Recipe

Ingredients:
1  3 oz. box strawberry jello
2 cups heavy whipping cream
8 – 10 fresh strawberries, diced
 diced strawberries
Directions:
Add heavy whipping cream and box of jello in mixer bowl. Mix on medium speed until jello is thoroughly incorporated and whip cream is thick.

Fold in fresh diced strawberries.

Scoop the strawberry mousse into a pretty dish. I used cocktail glasses but you could use any little dish you have.
Garnish with some whipped cream and a strawberry to make this easy strawberry mousse even prettier.

What’s in your snack bowl?

I’m hungry! I want a snack!  What do you do in your house when the snack attack strikes? Well I for one got tired of going to the kitchen to help the kids get out at snack. I got tired of the battle over healthy snack choices.  I have two boys who eat a lot. They eat three healthy meals and still snack morning, noon, night, and every time in between. So we have two snacking options available to them where they can help themselves, a snack bowl and a snack drawer.

What’s in your snack bowl?

First we have the snack bowl. Every morning I restock the snack bowl. It lives in the middle of our kitchen table and is open all day for unlimited snacking.  I usually only put fruits and vegetables in this bowl. That is why it is open for unlimited snacking.  And once the bowl is empty it stays empty until the next day. My boys are very active. They both swim two days a week. The oldest plays basketball twice a week. We take daily walks and play outside frequently as a break in our homeschool day. So having unrestricted access to fruits and vegetables in my opinion is okay since they still eat well at meal times. Occasionally, I try to find healthy snacks to give them a little more variety in the snack bowl. These snacks are usually small bags of nuts or fruit strips, something that does not have a lot of sugar and is healthy.  My boys love fruit strips and I love that they can go anywhere since they are so slim. This is one of the extra snacks I might put in the snack bowl. Recently I had the opportunity to try a new kind of fruit strip that is made with vegetables too. I have to say Veggie Go’s fruit strips are snack bowl approved! Veggie Go’s have 1/2 a serving of fruit and 1/2 a serving of veggies. There is no added sugar, they are organic and non-GMO.
